Hello!!

Man, first I must say sorry for not posting in so long. Been loads busy. Lots of new changes going on around here. Change number one, we're getting a new family member come spring! WEEE! Now I need a Vegan Baby on Board sign for my car! ;)

Here is the wee little he or she.

Next change, kids are taking a gym class & some other classes, so we're out & about much more often. Homeschooling is insanely FUN! But busy busy busy.

What's new in my vegan foodie world? I am still mainly doing the raw veganism thing. I find that with pregnancy I need a little bit of a break eating so darn much fruit & veg, so I added rice & beans back in and some lightly steamed or stir-fried veggies from time to time.

I went to START on the Street back in September & met Katie & Jay from VeganDirtyFoods & fell in love. Both with them & their company! Such nice people. So I should high five them over the net' & thank them for making practically everything they create gluten free & vegan! HIGH FIVE! Love you guys! Kids LOVE their every single thing they make!

I also made these Lasagna rolls for the kids recently. OH they were so great! We skipped the match meat, since it's not GF. But they were so great & he was so fun to watch. When I found the link on FB my kids heard it & came running over to watch & learn, then we prepped the lunch together. I love that about youtube recipes & getting the boys involved in making their own food. One difference we did with the recipe, my son LOVES the new daiya, the pepperjack cheese version & insisted on having it on his lasagna rolls! OH so YUMMY!



Also I made my own vegan yarn, sorta. I bought it on etsy & spun it with a drop spindle all by my oneness. I don't know if I told you this here, or maybe it was on my arty blog.

Last fun new change, we have internet, heat, hot water, lights and electricity again! We had a power outage that lasted about 7 days. We do lose power here often. We are in the sticks, so when it goes out, folks hear two hours--we hear 6 hours--at least.
So we made a game plan, got a generator, all kinds of backup necessities and have packed them all away (for now) in the garage. I shudder to think when it will go out again. UGH! We had the temps in the house around 55*F the whole time. It would have been warmer in here, but our rescued frog's tank needed heat too. I'm just thankful for hubby's quick generator purchase, and that she made it through the cold spell OK.

Hope you out there are staying warm & missed the recent Nor'easter & power outages. So sad the limbs that came down in the yard. But all the maple trees have made it OK. The pines are old hats at this weather & laughed it off. Sadly our lovely organic apple trees are pretty much gone. One more down & then we will get some more to plant here come spring. I am planning on using all the pieces from them that we can. I will compost the leaves, save the twigs for the summer campfires, and use the wood for my neighbor's fire pit & woodstove. I am also thinking of taking a slice of stump to make a little stump table in memory of them. One of the apple trees has quite the girth. Incredible it's so wide. Ya'd think was a sequoia not an apple tree. ;)
Will have to find out how old it is too.
