One thing I made recently for my kiddos, well mostly the kiddos. I did have a bite or two or three. ;) Was a cranberry-orange juice cheesecake pie. I used a tiny bit of agave nectar in the batter & when I served it I put on a dusting of powdered sugar, so it was tangy & sweet at the same time. Oh my yummy! I also made them a squash pureed soup. Just used a vegan bouillon cube, some other spices & blenderized squash. DEELISH. However, making it as a bisque type soup, with coconut & curry would also be delish. I'm considering making some more!
Without any further rambling, here is the cranberry orange cheezecake pie in all it's pre-bitten glory!

I used 2 containers of tofutti, 1/2 C fresh squeezed OJ, 1/2 a bag of cranberries, which I put into the blender, with a little water & blenderized em till they were puree. After this I simmered the cranberries & OJ with a tiny bit of agave nectar in a saucepan on the stove. I also added some thickener to the cranberry-OJ mix while it was simmering. I used 2 TSP of tapioca. I strained the seeds with a strainer. Poured the hot mixture into a glass bowl to cool. Once cooled I added the room temp tofutti. A bit more agave. I'd suggest maybe a 1/4 of a cup of agave, I know I used far less than this tho. More like 2 Tablespoons of agave for my pie. We're not big on sweet here, at least I'm not. Then I made the crust. I use raw coconut flour mixed with ground flax seeds, and rice flour. I then added a bit of agave to it & then melted butter to evenly coat & make the crust. (A quarter of a cup of each flour, 1/2 C of melted butter, and 1 tsp of agave.)pressed the dough into the pan, poured the batter over the top & put it in the oven on bake for 375*F for 10 minutes. Then turned it down to 350*F for the last 30 minutes or until set. I like to keep my pies looking the same colour, so I used some tin-foil over the top of the pie while it cooked. After this we let it cool on the counter, and then put it in the fridge. We like our cheezecake cool when eating it. Don't forget the Dusting of powdered sugar cane! Nom nom nom! It was so great. This was the very last thing my stove cooked in fact. Just after this, I put on the broiler to toast some toast, the next morning & heard three sounds that reminded me of popping corn going crazy. It was the fuses for the oven. Now the oven won't even turn on. Guessing it's curtains. Not all is lost tho, a friend is going to take it & turn it in for the metal weight for us. Now to just measure & pick out a new stove!

Another new thing this week. I finally did it. I made some biz cards for this blog.
My main reason for doing this is for helping out others. It's because I keep bumping into open-minded folks who say, "Ohhhh you're really healthy then, eating a vegan diet." My Midwife after seeing my low blood pressure, perfect blood test results, the weight loss I've had & my cholesterol levels being so low. Also my register attendant at the grocery store, and various other folks I bump into. I want to do some promoting & maybe put the bug in these folks' ears to try vegan or at least more vegan things to their diet. Eating a vegan diet is the best. The number one thing you can do for your health. Ever. I am not the only one who is saying this. Please check out the movie titled "A Delicate Balance." Or if you have time read The China Study. For a synopsis of the China Study you could also watch FOK, Forks Over Knives. I have heard that folks who have Netflix can see it there for free. I however watched it on Amazon, it was $3.99 to see it. It's life changing, folks. It's so important!
Now back to the treadmill, gotta burn all that energy!
