Happy Hanukkah!

What do you get with grated onion, grated potato, a little sea salt, a little pepper, onion powder, coconut milk, Gluten free flour, garlic powder & coconut oil?

You get heaven on your breakfast plate! Better known as Potato Latkes.

Today is the first day of Hanukkah, and we are here at home learning all about this lovely Holiday. When I first learned about it, I was enthralled. In love. Smitten. What a great story of Hanukkah! I was almost ready to convert! I even gave it some serious thought. I worked for a family that celebrated both Christmas & Hanukkah and learned how to cook some Jewish foods while there. The kids I nannied loved that & I also loved learning about them & making it more comfortable for them having me as their primary caretaker. Since that time I've spent time learning about other cultures & other religions. it's a fascinating subject for me. From Pagans to Kwanzaa I've learned a lot. I try to teach my children all about the world, different folks' ideas and incorporate it into a worldly way of being for my homeschoolers. Accept everyone, love everyone, anything less is unacceptable to me. We live in a melting pot. So stop the world & melt with me! ;)


It's really an easy dish to make & so yummy. A great side dish to practically any meal, you don't have to wait till Hanukkah! All I did was grate three red bliss potatoes, some onion & I mixed with a splash of coconut milk, a small handful of gluten free flour. (Most of my ingredients are organic. I'm anti-GMO) I used Bob's Redmill, but you can use wheat flour, if you prefer. I then seasoned it to taste with Himalayan Salt, Pepper, Onion Powder and Garlic Powder. Mixed the whole shooting match up in my bowl & let it sit for a few minutes. So easy! Then I turned the stove on, heated coconut oil in my pan. I use stainless steel, no teflon here! Now it was time to fry fry fry! I fry on one side, let them brown pretty good & flip. I like mine a little on the crunchy side.

I thought it was pretty inspired to cook them in coconut oil. Not sure if it's Kosher, but it was tasty. I didn't notice any coconut taste, but then I'm used to coconut oil by now & I really appreciate all the benefits that coconut oil has for me. We used Tofutti better than cream cheese & ketchup to dip them in. Traditionally I believe apple sauce & sour cream is used. I'm more interested in shredding my apples, and adding some walnuts & agave nectar to it for a snack later. Cause that is another of my fav snacks to have this time of year.
