Inspiration Hath Struck Again!

I watched the below video on how to make Vegan Eggless Salad this morning. It made me very hungry. I had some tofu & all the ingredients noted in my fridge. So I went to town.



I created my version. I just added one tiny additional ingredient, turmeric. Just a wee pinch, that's all. Oh and a sun dried tomato & some lettuce. YUM! I also used home made bread, since we're gluten free in this house. It was so good, nice to have a sandwich again, now & then.

This was so delish! I can def see myself making it again & again. And again!
Do you like eggless salad? Ever tried it? if not you def should give it a go. It was super quick, which is always always a plus here!

  1. LOL I love how she says 'cheese' and then stops herself and clarifies that it isn't the cow breast milk kind. hehe

    I've never had the hen periods kind of salad but this tofu version looks yummy! I'd probably eat it wrapped in lettuce along with the sun dried tomatoes that you've suggested. YUM!!!

  2. I know she is so cute! I've had the hens salad.. LOL! Long time ago now. I always worried about that sort of food & when I was grown up & away from my parent's house, I never made it. (WHEW!) Thankful for that & the semonella scares. It's really good in the lettuce. You don't even need the bread if you don't want it.
