I decided on something a bit easier. Scrambled Tofu & Steamed Veggies.

What can I say? I like easy when it comes to food. Simple. Quick. Into my belly. I am always always always hungry these days.(5 mos preggers) Nothing seems to fill me up for very long. I'm always toting along a fruit-veg smoothie or fruit when I head out. Drives me a little bonkers too. Always hungry.
I took some veggies I had in my fridge, spiced & steamed them in my cast iron skillet. Spinach, chopped organic tomatoes, black beans, sliced baby bella mushrooms. I used a small bit of spices to spice the veggies up. Pink Himalayan salt, nutritional yeast, black pepper, onion powder and garlic powder. Then just placed them altogether in the cast iron pan with a little coconut oil. Once it got going, I added some water & covered it & turned the heat off. Once the spinach was wilted I took it all out, placed into a bowl with a wee bit o' Daiya cheese. I use the mozzarella as that's my fav & what we had on hand. Covered the bowl with a plate & let the Daiya melt & the flavours mingle.
Next, I used organic tofu, broke it into tiny pieces with a fork. Then spiced it with a wee bit of the following spices: pink Himalayan salt, black pepper, nutritional yeast, turmeric, onion powder, garlic powder and gluten free vegan soy sauce. Put it into my coconut oil coated cast iron pan & cooked it for 2-3 minutes just to mostly warm it up. I added in the veggies & daiya & mixed the whole thing up in a semi-warm pan and turned it out onto my plate. Course in the middle here.. between all the cooking. I had to do the scrambled tofu thing twice. My sons came in smelled what was going on & wanted their own scrambled tofu. So I gave away my tofu & then whipped up some more for me. Funny how you can ask these boys, if they're hungry & they will say: "Naaah, not right now, I'm busy with the Legos." Then the minute they smell yummy stuff.. here they come a running! Typical?? ;)
Well anyways, we're all full right now. Off to the blender I head.. gotta whip up a smoothie, especially if I'm gonna get out of here today for a bit & enjoy the snow & sunshine!
